No Bake Energy Bite  Recipe

◾3/4 cup rolled oats

◾1/4 cup unsalted, roasted sunflower seeds

◾(Optional): 1/2 cup dried cranberries, chopped

◾1/4 cup dried carob chips, chopped

◾2 tbsp ground flaxseed

◾1/2 tsp kosher salt

◾3/4 cup creamy peanut butter

◾1 tbsp honey

◾1/2 tsp vanilla extract

Mix everything together in a big bowl, taking care to evenly distribute all the ingredients. Begin rolling dough into small bites, using a spoon or a cookie scoop to portion it out. If the dough feels too dry, add more peanut butter or honey. If it’s too wet, add some extra oats or flax.

This recipe makes about 12 bites. To keep them fresh, store in an airtight container in the refrigerator or cooler. They’ll keep for up to two weeks in the fridge! If you make the recipe exactly as described above, each bite is 177 calories.
