No Bake Energy Bite Recipe
◾3/4 cup rolled oats
◾1/4 cup unsalted, roasted sunflower seeds
◾(Optional): 1/2 cup dried cranberries, chopped
◾1/4 cup dried carob chips, chopped
◾2 tbsp ground flaxseed
◾1/2 tsp kosher salt
◾3/4 cup creamy peanut butter
◾1 tbsp honey
◾1/2 tsp vanilla extract
Mix everything together in a big bowl, taking care to evenly distribute all the ingredients. Begin rolling dough into small bites, using a spoon or a cookie scoop to portion it out. If the dough feels too dry, add more peanut butter or honey. If it’s too wet, add some extra oats or flax.
